Thai Chicken Coconut Soup

This is a great go-to cold weather soup. It's loaded with healthy vegetables and warming thai flavors and spices. I follow an ayurvedic approach to eating, especially following the principle of eating for the seasons. When the temperature drops, I love warming foods and beverages.


Ingredients:


2 Tbs avocado oil

1 pound organic chicken breasts, cubed

1 onion, chopped

1 cup carrots, chopped

1/2 cup celery, chopped

5 garlic cloves, minced

1 Tbs, fresh ginger, grated

3 stalks dried lemongrass

1 bay leaf

1 Tbs cumin

1 to 2 cartons organic chicken broth

1 can organic full fat coconut milk

Salt and pepper to taste

Topping suggestions: chopped cilantro, sauerkraut, avocado, juice of a lime, siracha.


Instructions:


Heat oil in a large pot and add chicken. Saute until almost cooked through. Add vegetables and continue sauteing for a couple of minutes. Add remaining ingredients, bring to a boil, and reduce heat to simmer. Simmer for 30 minutes. Add salt and pepper to taste. Serve in bowls and top with your favorite toppings.
