Buffalo Cauliflower Bites

I've always been a huge fan of buffalo wings and ranch dressing. Here's a healthy version using cauliflower and Primal Kitchen's Ranch Dressing. It's always a winner with my family and guests.

INGREDIENTS:

· 1 large head of cauliflower, stems removed and cut into bite-sized florets

· ½ cup Frank’s Red Hot Sauce (or for a cleaner version, check out http://www.kitchme.com/recipes/copycat-franks-redhot-sauce)

· 2 ½ Tbs ghee

· 1 Tbs coconut aminos

· ½ tsp garlic powder

· ¼ tsp cayenne pepper

· Ranch Dressing (I like @primalkitchenfoods Ranch)


INSTRUCTIONS:

· Preheat the oven to 400* F. Line a large baking sheet with parchment paper.

· In a small saucepan over medium heat, combine the hot sauce, ghee, coconut aminos, garlic powder & cayenne pepper until heated through.

· Place the cauliflower in a large bowl and toss with the sauce until evenly covered.

· Bake for 30-35 minutes, until the cauliflower is easily pierced with a fork, but not mushy.

· Serve with ranch dressing.
