Sweet Potato Nachos

For when you are craving nachos with "the works" but want to keep it wholesome and healthy without sacrificing taste! These are great for a party or as a fun alternative to a traditional meal.

Preheat oven to 400*
Ingredients:
- 2 large sweet potatoes, peels and sliced into thin rounds
- 2 Tbs coconut oil, melted
- Sea salt to taste
- 1 lime, juiced
- 1 tsp cumin
- ¼ tsp paprika
- ½ tsp chili powder
- ½ tsp sea salt
- 1 yellow onion, thinly sliced
- 1 red or orange pepper, thinly sliced
- 1 zucchini, thinly sliced
- 1 cup grape tomatoes, halved
- 3 garlic cloves, crushed
- 5 large kale leaves, ribbed removed and sliced into small ribbons
- 1 can organic black beans
- ¼ cup chopped cilantro
- 1 or 2 avocado, cubed
Instructions:
- Toss sliced sweet potatoes with 1 Tbs melted coconut oil and sea salt to taste (be generous). Spread on a baking sheet covered in parchment paper and bake for 40 minutes or until crispy on both sides. Flip over after 20 minutes.
- In a medium bowl, mix lime juice and spices. Set aside.
- Heat 1 Tbs coconut oil in a skillet. Add onion and bell pepper and saute for 3 minutes.
- Add zucchini, grape tomatoes, and garlic and saute for another 5 minutes.
- Add kale and saute until wilted.
- Add black beans and mix.
- Add lime mixture and ½ of cilantro.
- Arrange sweet potatoes on a platter and arrange the veggies in the middle, topped with avocado and more cilantro.
Feel free to swap out ingredients. If you are not sensitive to dairy, you could add some feta cheese or cultured sour cream. Enjoy! :)
