Cacao Almond Super Balls

For most of my life, I was a total sugar addict. I had what I thought was no self-control or willpower. I couldn't look at a a box of cookies or container of ice cream without eating the whole damn thing! Fast forward a few years and, through a lot of inner work and action steps to tap into mindfulness, intuitive eating, and making healthier choices, I am liberated from the dreaded S word (SUGAR!!).


On that happy note, I wanted to share with you one of my favorite recipes for when you need a little sweet in your life without the guilt or impossible-to-control cravings for MORE!


INGREDIENTS:


1/2 cup almonds, run through the food processor so finely chopped

1/2 cup GF oat flour (you can also run oats through the food processor; also, if you prefer, take out out flour and double chopped almonds)

2 cups Medjool dates

4 Tbs cacao powder

2 1/2 Tbs almond butter

2 Tbs coconut oil

1/2 cup shredded coconut


Blend all ingredients (except coconut) in a high-powered food processor. You will need to stir a few times to make sure everything gets blended. Form into 1 inch balls and roll in shredded coconut.


Last in fridge for a few months. Enjoy!!
