Sweet Potatoes with Homemade Sauerkraut

Who else loves simple, yummy goodness? We do! This is a quick and easy recipe, perfect for an holiday appetizer or light snack ;)
3 Sweet Potatoes
Dollop of Wallaby Sour Cream
Homemade Sauerkraut (We will be hosting another workshop soon!)
Parsley or Cilantro
-Preheat the oven to 400 degrees
-Peel sweet potato
- Cut in small rounds
-Place on baking sheet and cook for about 30 minutes
-Remove from oven, let cool
-Place sauerkraut and a dollop of sour cream on the rounds
-Top with herb
