Herby Quinoa Salad

We love summer for all the fresh herbs growing in abundance in pots on our patio. For this dish, we literally grabbed handfuls of various herbs to infuse the quinoa salad. So amazingly fresh and yummy! We also made use of the garlic scapes that are available at most farmer's markets this time of year. We love the subtle garlicky flavor they add to any dish!


Ingredients:

- 2 cups cooked quinoa

- 1 can organic non-BPA black beans (great when you don't have time to use dried beans!)

- 1 cup chopped heirloom grape tomatoes

- large bunch of assorted chopped herbs. I used thai basil, oregano, cilantro, parsley and arugula

- 3 garlic scapes, thinly sliced

- 1/4 cup chopped red onion

- handful of toasted slivered almonds

- 1/4 cup crumbled goat cheese (feta would work great as well!)

- 2 Tbs olive oil

- 1 Tbs apple cider vinegar

- 1 Tbs fresh lime juice

- sea salt to taste


You could easily make so many different versions of this depending on what ingredients you have on hand. We will often use chopped red/yellow/orange peppers, capers, sprouts, grilled veggies and/or feta cheese.
