Garlicky Parmesan Roasted Broccoli

The fresh basil on top is a game-changer. This is pictured without the parmesan as my health coach client I was meal prepping with preferred it without. Great both ways!

Preheat oven to 425*

· 1 head broccoli

· 4 garlic cloves, peeled and thinly sliced

· 2 Tbs Avocado oil

· ½ tsp sea salt

· ¼ tsp pepper

· 1 tsp lemon zest

· 1 Tbs lemon juice

· 1 ½ Tbs toasted pine nuts (or walnuts)

· ¼ cup parmesan cheese

· 1 Tbs julienned fresh basil leaves

Cut the broccoli florets from the thick stalks, leaving an inch or so of stalk attached. Spread broccoli on baking sheet lined with parchment paper and toss with garlic, avocado oil, and s&p. Roast for 25 minutes, until crisp-tender. Remove from oven and toss with 1 Tbs oil, lemon zest, lemon juice, pine nuts (or walnuts), parmesan and basil. Serve hot.
