Almond Flax Bread (grain free!)

We discovered this bread at a Farmer's Market in Killarney, Ireland a couple years ago. The woman was so sweet and happily shared the oh-so-incredibly-simple recipe. It is literally, 3 INGREDIENTS, folks! :)
- 1 cup chopped almonds
- 1 cup freshly ground flax
- 4 eggs
Combine all ingredients in the food processor. I usually add some s&p, and often ground cumin (#1 favorite spice!), and sometimes fresh herbs. You could also use the 3 ingredient base and make a sweet loaf by adding some cinnamon and honey.
Line a small loaf pan with parchment paper.
Bake at 350 degrees for about 30 minutes, until a toothpick comes out clean.
We've experimented by doubling this recipe to make a pizza crust. It's a bit stickly but it made an amazing, dense, thin crusted pizza. We like to slice it up and toast. Smashed avo with hemp seeds, homemade sprouts and sea salt or nut butter both make great toppings.
