Thai Chicken Coconut Soup

INGREDIENTS:
2 cartons organic chicken broth
5 cloves minced garlic
1 Tbs minced ginger
1 onion, chopped
1 cup celery, chopped
1 cup carrots, chopped
2 tsp dried lemongrass
1 bay leaf
1 package shirataki noodles
1 can organic whole fat coconut milk
1 organic rotisserie chicken
1 cup arugula
¼ cup chopped parsley
Juice of 1 lime
Siracha to taste
Salt and pepper to taste
INSTRUCTIONS:
Heat chicken broth, garlic, ginger, onion, celery, and carrots. Add in dried lemongrass, bay leaf, shirataki noodles, can of coconut milk and salt and pepper to taste. When the vegetables are cooked through, add in chopped rotisserie chicken and heat through. Just before serving add in chopped parsley and arugula, the juice of a lime and a little siracha if you’d like.
You can easily swap out veggies and other ingredients in this recipe. I like to use fresh lemongrass (when I can find it!) and cilantro. Enjoy! :)
